Dorayaki
sweet red bean paste sandwiched between two soft and fluffy pancakes
Dorayaki Batter
- 2 eggs
- 70 grams sugar
- 21 grams honey
- 80 grams all purpose flour
- 1/2 tsp baking powder
- 1 tbsp water (15 grams)
Dorayaki pancakes
In a large bowl, whisk together the eggs, sugar, and honey
Sift in the flour and baking powder. Mix until well combined
Let the batter rest 15 minutes
After 15 minutes the batter should have thickened up a bit. Add 1 tbsp water to thin out the batter
Heat a frying pan on low heat. Add in a ladle of the batter and cook on low heat. Flip once you see bubbles form on top
Cook the other side for an additional ~30-45 seconds
