Dorayaki

sweet red bean paste sandwiched between two soft and fluffy pancakes

Ingredients
  

Dorayaki Batter

  • 2 eggs
  • 70 grams sugar
  • 21 grams honey
  • 80 grams all purpose flour
  • 1/2 tsp baking powder
  • 1 tbsp water (15 grams)

Filling

  • red bean paste

Instructions
 

Dorayaki pancakes

  • In a large bowl, whisk together the eggs, sugar, and honey
  • Sift in the flour and baking powder. Mix until well combined
  • Let the batter rest 15 minutes
  • After 15 minutes the batter should have thickened up a bit. Add 1 tbsp water to thin out the batter
  • Heat a frying pan on low heat. Add in a ladle of the batter and cook on low heat. Flip once you see bubbles form on top
  • Cook the other side for an additional ~30-45 seconds

Assembly

  • Take two pancakes and spread red bean paste on one of the pancakes
  • Place the second pancake on top to create a sandwich. Gently press the edges to seal the pancakes together
