A super simple dorayaki recipe that is bound to impress! Plus a bonus Totoro dorayaki at the end!

What is dorayaki?
Dorayaki is a Japanese food consisting of sweet red bean paste sandwiched between two soft and fluffy pieces of pancake.
Ingredients
dorayaki pancakes are comprised of basic ingredients:
- eggs
- sugar
- honey
- flour
- baking powder
- filling: red bean paste (you can either make your own or buy it from the Asian grocer)
Equipment needed
- large mixing bowl
- whisk
- frying pan
- spatula
- food scale (for measuring out ingredients)
- measuring spoons
Making the dorayaki batter
- In a large bowl, whisk together the eggs, honey, and sugar until combined.
- Sift in the flour and baking powder and mix until combined.
- Let the batter rest 15 minutes.
- After 15 minutes the batter should have thickened up a bit. Add 1 tbsp of water to thin out the batter to reach the desired consistency. The batter should be on the thinner side. (watch video below to see consistency required)
Cooking the dorayaki
- Heat a frying pan on low heat
- Pour a small ladle of the dorayaki batter onto the pan and cook on low heat. Flip once you see bubbles form on top
- Cook the other side for an additional ~30-45 seconds
Dorayaki assembly
- Take two dorayaki
- Spread red bean paste on one of the dorayaki
- Place the second dorayaki on top to create a sandwich and gently press along the edges to seal it together

Ingredients
Dorayaki Batter
- 2 eggs
- 70 grams sugar
- 21 grams honey
- 80 grams all purpose flour
- 1/2 tsp baking powder
- 1 tbsp water (15 grams)
Filling
- red bean paste
Instructions
Dorayaki pancakes
- In a large bowl, whisk together the eggs, sugar, and honey
- Sift in the flour and baking powder. Mix until well combined
- Let the batter rest 15 minutes

Assembly
- Take two pancakes and spread red bean paste on one of the pancakes
- Place the second pancake on top to create a sandwich. Gently press the edges to seal the pancakes together
Totoro dorayaki
You can use plain round dorayaki to make Totoro pancakes or make some special pancakes with ears if you like.
- Add a ladle of pancake batter to the the frying pan and then use a small spoon to add on additional batter for the two ears. Flip the pancakes once you see bubbles form. Cook the other side then remove from heat and let it cool.
- Sandwich red bean paste between two Totoro shaped pancakes
- There are two options to create the Totoro design on the pancake:
- Make a stencil out of parchment paper: Place the stencil on top of the pancake and dust powdered sugar on top. Add on the additional designs with melted chocolate
- Use melted chocolate: use melted white chocolate for Totoro’s eyes and belly. Add on the additional details with melted milk chocolate.
