Chocolate Mummy Madeleines

These chocolate madeleines are decorated as mummies making them a super fun and simple Halloween treat!

What are madeleines?

Madeleines are little French cakes. They are baked in a special madeleine pan which gives it its distinctive shape. They have a shell like shape on one side and a hump on the other. Many people think that the “good” part of the madeleine is the shell-shaped side but the hump is actually the indicator of a good madeleine. 

The shell-shaped side is the side that is decorated. The most common way people decorate madeleines is simply dipping them into chocolate. This gives the madeleine a pretty chocolate shell coating. 

I decorated my madeleines as mummies for a fun Halloween treat.

Making the madeleines

The first step in making madeleines is to get a madeleine pan. There are lots of options out there. This is the one I have. 

The second step is to make the madeleine batter. The process is simple.

  1. Whisk together egg, milk, and honey
  2. Add in flour, sugar, cocoa powder, and baking soda. Mix until everything is combined.
  3. Mix in the melted butter. 
  4. Chill the batter in the fridge for 1 hour. 

Make sure to also brush the madeleine pan with melted butter and chill this in the fridge for an hour. 

Once an hour is up, transfer the batter into a piping bag and pipe the batter out into the madeleine pan. You can also use a spoon to spoon the batter into the pan if you don’t have any piping bags.

Bake the madeleines at 180C/356F for 11 minutes. 

Allow the madeleines to fully cool before decorating.

Decorating Mummy Madeleines

These mummy madeleines are super easy to decorate. All you need is some chocolate. For this you need white chocolate plus just a little bit of normal milk chocolate to dot the pupils in the mummy’s eyes. 

  1. Place melted white chocolate into a clean madeleine pan and then gently press a madeleine into it
  2. Place the madeleines into the freezer until the chocolate hardens (about 20 minutes). The madeleines should pop right out of the molds. 
  3. Drizzle the madeleines with white chocolate. This gives the bandages look to the mummies
  4. Draw on the eyes with chocolate.
  5. Let chocolate dry and then enjoy your spooky treat

  • 1 large egg
  • 5 grams milk
  • 5 grams honey
  • 45 grams flour
  • 40 grams sugar
  • 9 grams cocoa powder
  • 1/2 tsp baking powder
  • 50 grams butter, melted
  • chocolate for decorating

Instructions
 

  • Whisk together the egg, milk, and honey
  • Add in the flour, sugar, cocoa powder, and baking powder. Mix until combined
  • Mix in the melted butter
  • Chill the batter in the fridge for 1 hour
  • Brush the madeleine pan with butter and also chill this in the fridge for an hour
  • Transfer the batter to a piping bag and pipe out into the madeleine pan
  • Bake at 180C/356F for 11 minutes
  • Allow madeleines to cool before decorating with chocolate
